Like many folks out there, I do not have a lot of time to cook, so when I do cook, I try to find recipes that I can 1) make quick and easy meals with, and 2) make large quantities of so that I can freeze extras for later meals.
This gluten-free, dairy-free sweet potato soup recipe came from a last minute craving and not a lot of time to make something that my kiddos were craving.
You will need: cooked cubes of sweet potatoes (I had some in the freezer already), almond milk (or your choice of milk), almond yogurt (again, your choice of yogurt), curry powder, salt, pepper, and thyme.
1. Ready folks…this is SUPER SIMPLE! Dump the cooked sweet potato cubes into a blender and puree.
2. Pour the sweet potato puree into a saucer on your stove. Add about 1-2 cups of almond milk and about 1 cups of almond yogurt (depending on how many sweet potato cubes you used). Gently stir until you reach your desired consistency.
3. Sprinkle 1 tbsp. curry powder and a few pinches of fresh thyme. Add salt and pepper to taste.
4. There you have it! Quick, fast, and super simple! GFCF Sweet Potato Soup dinner can be on the table in less than 15 minutes!!
